Yeah, food can be yummy and safe for your diabetes. Today I dedicate my time to some chicken recipes for diabetics. They are really delicious ones. Within an hour you can feed the whole family with ravishing dishes. I have selected two chicken recipes for diabetics. They are easy to cook and splendid in taste. - Chicken parmesan dish. The first recipe I would love to tell about is the Chicken Parmesan. You will need the following:
4 skinless, boneless chicken breast halves
2 cans (14.5 oz ea) Italian-style stewed tomatoes
2 tbsps cornstarch
1/2 tsp basil
1/4 tsp oregano
1/4 tsp hot pepper sauce, optional
1/4 cup grated Parmesan cheese
Directions: Firstly you should preheat oven to 425 degrees. Then place chicken in a large baking dish. Bake chicken, covered, for 20 minutes at 410 degrees; then drain. In a 2-qt saucepan you need to combine the tomatoes, cornstarch, basil, oregano and the pepper sauce. Cook the tomato mixture, stirring constantly until thickened. Pour this hot sauce over the chicken and put the Parmesan cheese over the top. Then you should return chicken to oven, uncovered, for another 5 minutes. - Chicken wit mushrooms. This tasty dish is the favorite of my mom. She suffers from diabetes and I cook it very often for her. I adore mushrooms. I hope you like it. Ingredients:
4 skinless, boneless chicken breasts
1/3 cup flour
1 tsp salt
1/4 tsp fresh ground black pepper
3 tbsps butter
1/4 tsp minced garlic
1 cup sliced green onions
8-oz fresh mushrooms, sliced or canned ones but drained
3/4 cup chicken broth
1 can (10-oz) cream of mushroom soup
Directions: Firstly you should mix flour, salt and pepper together in a shallow bowl. Cover chicken well with the flour mixture and put in the fridge while preparing the onions and mushrooms. Heat the butter and add the garlic, onions, mushrooms and sauté. Then you should remove vegetables with slotted spoon. Then take chicken from the fridge and add to the skillet. Cook the chicken for about 5 minutes each side. Then you need to add broth and soup to the skillet. Cook all, stirring very often, for about 5 minutes. Return the mushroom mixture to the skillet and reduce heat to low. Serve and enjoy!
